Eggs on Greens

Eggs on Greens is the perfect way to start your day!  Breakfast is so important and many of us forget, don’t have time, or just skip it.  What a shame when you can start your day like this.  A delicious, fresh, and nourishing meal to get you going right. 

After not eating for so many hours (break-fast) why not put more effort into feeding your body well.  These eggs on greens are a quick and delicious recipe to make that I love.  You can prep the greens in advance to save time and have them in your fridge ready to warm up and serve.  With a little prep, this hot delicious and nutritious breakfast can be made in minutes.

INGREDIENTS

1 cup broccoli florets, cut into small pieces
1 cup kale (stems removed and cut into strips)
1/3 cup leek, dices
2 organic eggs
2 tbsp. olive oil/avocado oil
1 tbsp. lemon juice
Salt and pepper to taste

Avocado toast:
1 slice whole grain bread, toasted
½ avocado
sprinkle with salt, pepper, lemon juice

DIRECTIONS

In a medium skillet heat avocado oil.

Add leek and broccoli and fry on medium heat for about 5 minutes. Then add kale and a tablespoon of water, cover and let simmer on low heat for 3 more minutes. Season with salt, pepper, a drizzle of olive oil and sprinkle with lemon juice.

In a separate skillet heat 1 tbsp. of avocado oil and fry the eggs until the egg white is done and the yolk is still soft. Serve eggs on top of greens with avocado toast on the side. YUM!
