Tuna Matzah Melt

It’s Passover, it’s spring time, and it’s time for a new recipe idea. As some of you may have seen on my Instagram account I was playing around with the Tik Tok food craze Tortilla wrap idea only with Matzah, the Tuna Matzah Melt. This is a fun, and quick way to make a delicious little snacks you can hold and enjoy. Who says matzah is hard and boring!

Matzah

So before I get to the fun stuff, for anyone not familiar with Passover or Matzah I will quickly explain. Passover is a Jewish holiday celebrated around the same time as Easter. It is the celebration or freeing of the Jewish people from slavery in Egypt. I will not get into to more details, as I am definitely not an expert on religion (even my own) but if you want to know the details google it for full story or get invited to a Passover Seder to hear all about it. So when the Jews were leaving or escaping Egypt they had no time to wait for bread to rise, so they made these unleavened, flat breads which we call Matzah.

Matzah is basically a thin, crisp, dry unleavened bread made from flour and water. I of course do not each wheat so I buy gluten free matzah made from potato and tapioca flour. By the way the gluten free one so delicious, and tastier then the traditional one. Many people prefer it and eat it all year round. It tastes like yummy crackers.

How to make matzah flexible?

Matzah flexible? Sounds impossible and is a bit tricky, but with some help your tuna matzah melt will come out great. Be sure to check out video below to see all steps first before starting and read all instructions carefully.

The first and hardest part is getting the matzah soft enough to fold, yet not to soggy that it falls apart. I take my square of matzah and wet it under the tap for about 30 seconds making sure it gets wet all over. Then I place it on a paper towel to rest and finish soaking. I usually prep everything else in the mean time while it softens. Check on it after 5 min and if it’s not soft enough, sprinkle with more water. The idea is to get it soft enough to fold without breaking. Remember we will fold it into 4 squares.

Filling

The fun part of this snack is that you do not have to make a tuna matzah melt per say. You can fill it with any combo you like. I have tried sweet and savory versions both equally delicious. Some ideas are Mexican fiesta – black beans, cheese, tomato, and avocado. Another is Mediterranean Dreams – with roasted peppers, feta cheese, grilled zucchini, and roasted garlic. Folding and Frying

The final and fun part is folding it up and frying it. We must imagine this matzah square to be like a piece of paper that is folded into four squares and opened up like this

We want to cut a slit on the bottom half in the middle to center of matzah. Then we place ingredients on each square. For this Tuna Matzah Melt I put tuna on bottom left square, tomato slices on top left square, then aged cheddar or vegan cheddar on top right square, and lastly slices onions on bottom right square.

Carefully we then fold tuna square up and over the tomato square. Then that folds over to right onto cheese square. Lastly we fold all that down and over the onion square. You should have one small very thick square. Carefully dip this in egg wash (like French toast) and straight into hot pan. Fry up a minute on each side and enjoy.

A few more tips

When working with wet matzah you need to work fast or it will fall apart. If it cracks a bit while folding don’t worry, it will stick all together once fried and melted. What is key is to have everything ready before you assemble and cook. This mean all fillings cut and chopped. It means beating the egg in a bowl so it’s ready, and it means having pan on the heat getting hot while you fold. If you have to pause and wait to dip egg, or heat pan it will fall apart and get real messy. Trust me from several failed experiences!

Although it looks messy or tricky, this Tuna Matzah Melt is so delicious and fun to eat. I promise its worth the try and after making 2 or 3 you will become a pro. Happy Cooking!

Tuna Matzah Melt wrap. A great snack or lunch for this Passover. Fill it, fold it, and fry it up with anything you like and enjoy.

Ingredients

  • 1 piece of gluten free matzah
  • 2-3 Tbsp tuna
  • 1-2 Tbsp grated aged cheddar
  • 2 slices of tomato
  • 1-2 slices of red onion
  • 1 egg
  • avocado oil spray
  • water

Instructions

  1. take gluten free matzah and run it under tap for 30 seconds to ensure it gets totally wet. Place on a paper towel on counter.
  2. While matzah softens, prep rest of ingredients so your ready to move fast. Chop tomato and onions. Grate cheese. Open and drain tuna.
  3. Using a medium size bowl, beat egg so its ready to dip matzah wrap in.
  4. Check on wet matzah. It should be soft enough to bend without breaking. If not splash with more water and let sit a few more minutes.
  5. When matzah is soft enough, heat a frying pan of medium.
  6. Take matzah and cut a slit in bottom half to the middle of matzah (see video for details) and place a little of each ingredient on each of the four corners. Imagine if it was a paper folded into 4 squares. Place tuna on first square, then tomatoes, then cheese in third square and onions in last square.
  7. Carefully fold tuna square up and over the tomato square. Then fold that to the right onto cheese square, and lastly fold all that super carefully down over onions.
  8. you should get 1 small very thick square. Dip that in bowl with egg and quickly place on hot pan.
  9. let it cook for 1-2 minutes and flip over.
  10. Remove from pan and slice in half to eat like a sandwich.

Notes

You can use regular matzah if you do not have gluten issues.

For Dairy free you can use vegan cheese

You can switch any of the ingredients in each square and make your own combinations.
