Blueberry Cloud cookies

Wait until you see how beautiful these Blueberry Cloud Cookies come out. They are super easy to make and are vegan, paleo, sugar free, dairy free and grain free. Free of so many things but I promise they will not disappoint!

Actually these blueberry cloud cookies were inspired by a recent TikTok video that went viral. I guess the dreamy purple color got everyone’s attention. However as you all know me already, I cannot make a recipe with unhealthy ingredients so I had to switch it up and re-create my own vegan, grain free, and sugar free version.

Just look at that color, and no filters or dyes were used, just blueberries!

Special Ingredients

What makes my blueberry cloud cookies different or better is that they are made with a mix of grain free flours like almond, coconut, tapioca and potato starch. I actually make a Paleo flour mix and have it on hand ready to use for all my Paleo baking. You can buy a mix like this from Bob red mills – Paleo Flour which is similar to mine and would work fine. I just make my own as I already have all these different alternative flours at home. If you are new at grain free baking, I defiantly recommend using the Paleo flour as you have a “all purpose” mix in one bag.

Aside from that, the only other ingredients you may need to get that are “special” are monk fruit to sweeten it, and keep it sugar free and Lily’s White Chocolate chips, also sugar free. Of course you do not have to make this sugar free and still keep it healthy by using coconut sugar instead.

Tips

There really isn’t much to making these blueberry cloud cookies. Here are some tips to get them just right. For blueberries you can use frozen or fresh and just thaw them and warm them in microwave to get them soft and jammy. This is important to get that beautiful color.

The only other important tip is to watch them when baking. If you over bake them they color will go from a deep beautiful purple to brown. The taste will still be great, however if you want them to stay purple you have to bake them just enough to harden but not to much to over bake. Also this keeps them soft and chewy, like a cross between a blueberry muffin and a chocolate chip cookie.

These dreamy blueberry cloud cookies are Vegan and Paleo and totally sugar free. A quick a easy recipe for a delicious healthy treat.

Ingredients

  • 1/3 cup coconut oil
  • 1/3 cup monkfruit
  • 1/2 cup frozen blueberries
  • 1 1/2 cups of paleo flour (see notes)
  • 1 tsp baking soda
  • 1/4 cup Lily's white chocolate chips

Instructions

  1. Preheat oven to 325F and line baking sheet with parchment paper.
  2. Take blueberries out of freezer and place in microwave for 20-30 seconds to defrost and soften. They should be jammy. If you prefer not to use microwave then cook in a small sauce pan for a few minutes until soft.
  3. Allow blueberries to cool and in the meantime mix monk fruit and coconut oil with mixer until fluffy.
  4. Add in cooled blueberries to mixture and blend again to mash blueberries and get the amazing purple color.
  5. Add paleo flour and baking soda and mix just enough to incorporate and add in white chocolate chips.
  6. Using a teaspoon scoop out cookie dough and form into small balls. Place on baking sheet and slightly flatten. The cookies will not spread out so they can be close to each other. Also do not flatten too much or they will burn.
  7. Bake for 12-14 min keeping an eye on them that they do not over bake. They will come out soft from oven. Leave to cool completely before eating as they will firm up but stay chewy.

Notes

To make Paleo flour mix 2.5 cups almond flour, 1.5 cups coconut flour, 1 cup tapioca flour and 1 cup potato starch. This will make a large amount that you can use for other things too.
