Fast and Easy Healthy Dinners

It seems that most people struggle with this, including me, so I decided to write a post this week of all my family favorite fast and easy healthy dinners. Although many think I spend hours in the kitchen, I really don’t. All my own recipes plus the recipes I love from other fellow bloggers are fast, easy and healthy.

Today I will talk about all my families “go to” for fast and easy healthy dinners. I mean these are the recipes I make weekly, and although some are not my own, I almost feel like they have become mine as I make them so often and have modified or changed things up for each. However, I want to give proper credit to the talented people who made these recipes so I will share the original ones, and some of course are my originals as well.

When I think of dinner, I think of healthy first, but always fast and easy. By the time dinner rolls around I don’t want to start thinking of what to make or if I have ingredients at home. So over the past few years of testing recipes and creating my own I have come up with a list of fast and easy healthy dinners that are my family go to’s.

Eggroll in a Bowl

I think the first and most made fast and easy healthy dinners in my house is Eggroll in a Bowl. This is quick and easy, super low carb and packed with tons of veggies. Think a healthy version of an eggroll with no dough, just the filling. I like two recipes in particular, one is from Detoxinista which is vegetarian and the other is from Nom Nom Paleo with meat. Both equally delicious and sometimes I combine the two as many ingredients are similar. The best part about this meal is that you only need a few ingredients and you can prepare and serve all with 20 min. Also you can use any kind of meat, you can switch out Napa cabbage for regular cabbage and you can add any veggies you want.

Tacos

Next on my list is Tacos. This is a weekly fast and easy healthy dinners I make with fish, however sometimes I switch it up and use beef or chicken. I love using Siete Foods Tortillas as they are grain free and delicious. To give it a kick of flavor I mix up a creamy spicy pink sauce that is delicious. Check out the recipe below

Fish Tacos

Fish Tacos

Yield: 4
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Delicious, fast and easy dinner that your whole family will love! Grain-Free and pescatarian and loaded with flavor.

Ingredients

  • 2 pound wild Alaskan cod fillets
  • 1 tsp chili powder
  • 1 tsp cayenne powder
  • 1 lime, halved
  • 3/4 cup lactose free sour cream/ Greek yogurt/non dairy yogurt
  • 1 tsp garlic powder
  • Whole grain or grain free tortillas
  • 2 cups of shredded cabbage - purple or green
  • 1 avocado halved, seeded, peeled, and sliced (optional)
  • 1 cup organic cherry tomatoes, quartered (optional)

Instructions

    1. Start with chili-lime sauce.  Take yogurt, chili powder, garlic, cayenne,
      salt and 2 tsp of lime juice and mix together to make a sauce.  Place aside.
    2. If vegetables are not prepped, chop, cube, and slice them.  Cabbage into thin slices, avocado cubes and cherry tomatoes half or quartered.
    3. Take fish sprinkle with salt, garlic, and chili powder.  Place fish on baking
      sheet and place in oven to cook for 10-12 min, until cooked and flaky.  Remove from oven and break apart with fork.  Place into bowl, ready to serve.
    4. Serve already assembled or place everything on table and everyone makes their own, as they like. 
    5. To assemble place tortilla, then
      shredded cabbage, on top add fish, then sprinkle avocado and cherry tomatoes, and then add a dollop of chili-lime sauce

Notes

You may also like to add hot sauce, pickled hot peppers or pickled onions.

Green Chicken

Another fast and easy healthy dinners, again Nom Nom Paleo recipe but I think its one of my favorites. What I love most about this recipe is you can make it in advance and freeze the sauce. I always have some chicken in my freezer and a batch of the green sauce. The flavors are delicious and the chicken comes out perfect every time. Since I don’t have a BBQ, I love making this in the air fryer and it comes out extra crisp and delicious. Usually I serve this with steamed green beans or roasted cauliflower and a salad.

Soups

We love soup any time of the year, and I always try to make a hearty soup that is a meal. When It’s soup night that is all I make. However I make sure to pack it with all kinds of veggies, a protein and sometimes a noodle like the miracle noodles that are zero carbs and almost no calories. Soup is great because you can prepare it in advance, make a large amount and have left overs for the rest of the week. Also you can make and freeze it, so you have it ready spontaneously. Schnitzel

For those who don’t know what Schnitzel is, its basically breaded chicken, beef or veal that is deep fried. Very delicious but not so healthy. My version is breaded in a super seed and nuts mix, and is air fried. Healthy and delicious. I like to serve this with salad or some steamed or grilled veggies and cauliflower or potato mash.
