These Beauty bite cookies are an all time favorite in my house and anyone who tries them. Not only are they delicious, but they are so versatile that you can make them different every time, and they still come out amazing.
Additionally, these cookies are great because they are grain-free, dairy-free, and no refined sugars are used to make them. Clean and simple, real ingredients to make a delicious treat everyone will love.
Actually, when I developed this recipe I first thought to call them “everything but the kitchen sink” because literally you can add any toppings you want in them and they come out amazing. Eventually I realized that the name “everything but the kitchen sink” could be displeasing. Therefore I re-thought up a new name and decided on beauty bites. This name actually had a double meaning because these yummy beauty bite cookies are packed with collagen, gelatin, and antioxidants that provide nutrients for your skin and bones. The protein keeps you full and satisfied, while the nuts and berries give you flavor and vitamins and minerals your body needs.
This is a great snack for adults and kids alike. My favorite part of making these is that you only need 1 bowl, 1 measuring cup 1 tablespoon, and 1 teaspoon. Quick and easy clean up with minimal equipment! Get your kids involved in making them and let them choose the topping to come up with your own creation.

INGREDIENTS
1 cup almond flour
2 tbsp. almond butter
2 tbsp. coconut sugar
1 tbsp. coconut oil
1 tbsp. maple syrup
1 tbsp. collagen peptides or gelatin or 1/2 tbsp. of each
1-2 tbsp. almond milk
1tsp. vanilla or almond extract
zest of 1/2 and orange or 1 mandarin
1 tsp. baking soda
Ad ins – approx. 3/4 to 1 cup total – chocolate chips, dried cranberries, fresh cranberries, chopped pecans, chopped walnuts, chopped almonds, pumpkin seeds, shredded coconut, sunflower seeds, cacao nibs, chia seeds.
DIRECTIONS
Preheat oven to 350F and line a baking sheets with parchment paper.
Mix all ingredients except ad-ins in a bowl. You will get a thick sticky mixture.
add the add-ins, you can do any combination or all, just make sure it adds up to 3/4 cup and mix well. If the mixture after ad-ins is very dry you can add in more almond milk, just be careful not to make it too wet.
Using a tablespoon form a ball and place on baking sheet, gently press down to form a round cookie. These will not spread out, so you can place them close to each other. You should get 14-16 cookies.
Bake for 12-15 min and remove from oven. Wait 10 min before moving on to a cookie rack to cool. These cookies will be soft and delicious for 1 week in an air tight container.
