Choco Mint Nice-Cream

I don’t know about you, but here in Miami the heat is on. School is almost over, and it’s starting to feel like summer. Here is a quick and easy dessert you can make and enjoy on a hot summer day, Choco mint nice-cream. It’s rich and indulgent, yet fresh and cold. The best part is that it’s healthy, and easy to make.

For this recipe, I stuck to the bare minimum of ingredients to show you that you can still make something delicious without a lot. Bananas are used as the base for this dessert which is great as you get a creamy texture, a lot of natural sweetness without adding anything, and a lot of nutritional benefits.

Did you know that green unripe bananas are known to be good for helping gastrointestinal issues? Here are some other interesting health benefits about bananas – they high in fiber to help keep you regular. They have high amounts of potassium and electrolytes to help your body recover after sports. They can help improve mood because of high levels of tryptophan, which the body converts to serotonin, and they can help vision and bone health.

Whenever I have over ripe bananas at home I peel and cut them, and freeze them. This way you don’t waste, and can put them to good use later on. Also it makes life a lot easier when you want to make this recipe spontaneously. No planning necessary, just pop them out of the freezer and your good to go. Please remember to peel them before freezing, otherwise its a nightmare to get skin off. Having frozen bananas in your freezer is great not only for this recipe but also for banana bread, or smoothies.

Last tip – once you make it, you can freeze it in an air-tight container and save some for later. Just remember when you take it out of freezer, leave it on counter for 5-10 min to soften, before trying to scoop it out.

Remember you can be creative – if you don’t like chocolate, no problem just replace the cacao powder and mint for another fruit like strawberries, or lime, or even just leave it plain old banana. You can add cookie crumbles to it, or chocolate chips or dehydrated fruit for extra flavor and crunch. The sky’s the limits with this Choco mint nice-cream! Happy Cooking.
