Best Grain Free Waffles

It’s summer time, and I’m struggling to find time to write my blog! Sorry I have not been so consistent, but I will try my best to squeeze in some time to share my recipes and keep inspiring you to cook delicious food over the summer. Today’s weekend inspiration is a favorite of mine. It’s great for breakfast, snacks and desserts. An amazing treat for ice cream sandwiches and even ice cream cones – it’s the best Grain Free Waffles you will ever try!.

There are lots of grain free, or gluten free waffle recipes out there that I have tried and tasted, however these are the best grain free waffles out there, I promise. Not only is it delicious, fluffy and has a great texture. It also contains lots of healthy and delicious ingredients making it extra good, and guilt free.

Many of you know I follow a grain free diet, so I am always looking for ways to make the yummy foods we all love, healthier and grain free without compromising on taste. I think these waffles are a great example and very easy to make.

The recipe is for a small batch. I usually prefer to make small batches and eat them fresh, then to make a big batch and keep it over a few days, that’s just my personal preference. However if you are a big family or like to prep and make things in advance you can easily double or triple this recipe and keep batter in fridge to make fresh each morning. All you really need are a few simple ingredients, and a waffle maker.

So are you ready to try it out? I promise you it is super fast and easy. These best grain-free waffles are packed with chia seeds and almond flour and healthy fats, to keep you full all morning. Waffle maker

Now about the waffle maker, if you have one – great. If you don’t, like I didn’t because you just didn’t need another appliance in your kitchen. The solution I found was this teeny tiny waffle maker I got at Target for $9.99. I know it is another appliance but it is so small you can stuff it in a drawer. Here is a picture of it so you can see how small it is. It makes one waffle at a time, but I find it to be a great size. With this machine you get 5-6 waffles form 1 batch of batter.

Recipe

ingredients

2/3 cup almond flour

1/3 cup tapioca flour

1 tsp baking powder

1/2 tsp pumpkin spice or cinnamon

1 tbsp chia seeds

1-2 tbsp maple sugar or honey

1 egg or 2.5 tbsp water + 1 tbsp flax meal for vegans

1/4 cup almond or coconut milk

1 tsp Apple cider vinegar

1/8 cup coconut oil melted

1 tsp vanilla extract

Directions

Place all dry ingredients in bowl and mix well including chia seeds

For vegan egg place warm water and flax meal in a separate small bowl and mix.  Let it sit for 5 minutes to thicken up.

If using egg, beat in a small bowl and add in all wet ingredients,

Mix wet ingredients (and vegan egg if using) into dry ones and add chia seeds.  Let sit for 1 min to thicken up.

Pour 1-2 tbsp. into heated waffle maker and cook. 

Enjoy with fresh fruits and honey

Things to remember:

If batter is to thick, add more almond milk

You can keep batter in a mason jar in fridge for up to 3 days. It will thicken, so before using it add more almond milk

If you like chocolate waffles add 2 tbsp. of cacao powder and add 3 tbsp. of extra almond milk to batter.

If you are making a vegan egg, you will need to add and additional 1/4 cup milk to get right consistency

For ice cream cones – allow waffles to cool. Roll them with a rolling pin to flatten and roll into a cone shape. Use a foil ball (crunch foil into a ball shape) to help hold cone shape. Place on baking sheet, seem side down and bake at 200 for 10 to 15 min until dry and hard.
