In my last post I shared the best pesto in town recipe (check it out if you have not already). So today I will share a recipe you can make using this amazing pesto sauce – my Besto (best pesto) Meatballs (sorry vegans, today is a meat recipe but you can substitute meat for the vegan beyond the meat ground).
Meatballs are a great make in advance recipe that you can double or triple and and freeze part to meal prep and keep for another night. What’s great about these is you can keep them in the fridge for 3-4 days and eat them as a snack, put them in a sandwich, eat them for lunch or dinner, or add sauce on them and serve with pasta or rice. My Besto (best pesto) meatballs go with everything and I think they look pretty too.
To make these meatballs you can use vegan ground, turkey, chicken, or beef. Everything goes in 1 bowl, and mixed together and then you form the balls. I like to make them small, just because I think bite-size always tastes and looks better.
These Besto (best pesto) meatballs are perfect for baking. I like to bake these meatballs as it is quicker and less work for me. I find that in a hot oven they get crispy and nicely browned without the extra oil of frying. However you can fry them if you feel like it. Once all the meatballs are placed on the baking sheet, upi can decorate them with an olive on top and then pop them into the oven. Happy cooking!

Besto (best pesto) Meatballs
Best Pesto Meatballs - Besto Meatballs!
Light, flavorful and delicious snack or meal.
Ingredients
- 1 lb ground beef
- 1/4 cup almond flour
- 1/2 cup Best Pesto in Town (see link to recipe below)
- 2 tbsp tomato paste
- 1/2 large grated red onion
- 2 cloves of garlic
- 1 tsp sea salt
- 1 Tbsp Italian spice mix
- Black or green olives for decoration
Instructions
- Preheat oven to 350 F and line a baking sheet with parchment paper.
- If you do not have The Best Pesto in Town ready, prepare now.
- In a large mix add all ingredients except olives.
- Mix well until everything is incorporated.
- Using your hands form small meatballs, about 1 Tbsp in size for each. You should get between 22-24 balls.
- Place them on the baking sheet .
- Cut olives in half lengthwise and press 1 piece of olive on each meatball.
- Bake for 20-25 minutes until gold brown and serve.
Notes
- You can substitute ground beef for ground turkey or ground chicken

- For Whole30 omit parmesan cheese in pesto sauce.
