Heaping Health Salad

This Heaping health salad is a super easy and quick little meal you can put together in minutes! No cooking time, barely any prep work. It’s a “throw together” salad with amazing healing foods to enjoy, and do your body well. Additionally, this heaping health salad is also Vegan, Keto, Raw, and Paleo approved. It’s a wonderful low carb, high fat meal that can please everyone.

Recently, I watched a documentary on how foods heal the body. All of a sudden, I got inspired to try incorporating as many superfoods, and healing foods into one dish, while bursting with flavor. All things considered, I think it came out a winner.

The heaping health salad is made from nuts, olives and avocado for healthy fats, dark leafy greens and microgreens for extra nutrients, hemp seeds for heart health, parsley for detoxification, and healing spices like turmeric and cayenne pepper to help reduce inflammation and help blood circulation.

In addition to all that goodness, the final and secret ingredient in this salad is the miracle noodles. Have you tried these yet? These are translucent, gelatinous Japanese noodles, made from the konjac yam. They are low in calories and carbohydrates. These are a great substitute in a variety of recipes that call for pasta, and you can buy them at the supermarket or on Amazon. What’s interesting is that these noodles do not have any flavor at all. So in order to get them tasting good, you need to add flavor to them and they will absorb that taste. Additionally, these noodles are a great source of fiber, which is a great pre-biotic for the gut.

Try it out and see for yourself how delicious and easy it is. This salad makes for a great breakfast or lunch, which can be made in advance and pulled out of the fridge when you’re hungry. I personally love eating it after my workout as a late breakfast/lunch. Happy Cooking!

INGREDIENTS

2 packages of Miracle noodles – spaghetti or fettuccine

1 cup raw chopped spinach

1/2 cup chopped unsalted macadamia nuts

1/3 of parsley chopped

1/2 cup olives (black or green pitted and chopped)

1 avocado chopped

1/2 cup of micro greens

2-3 tbsp. hemp seeds

2-3 tbsp. olive oil

Juice of 1/2 a lemon

A pinch of cayenne pepper

1/4 tsp. Turmeric

Sea salt and pepper to tast

DIRECTIONS

To start rinse miracle noodles with water. They have a strong smell when you open the bag however will go away once you wash them. Add noodles to boiling water and cook for 2 min. (boiling is optional and is just done to remove natural smell of konjak yam). If you do not want to boil noodles just rinse well in hot water.

In the meantime, chop nuts, spinach, parsley, olives, and avocado and place in a large bowl. Add in micro greens, hemp seeds and spices and mix well.

Remove noodles from the water and rinse again if you boiled them. Once noodle cool, add them to the salad and mix well.

Allow salad to rest for 10-15 min to absorb flavors and enjoy. You can store this in an air tight container in the refrigerator for up tp 3 days.
