Zesty Cilantro Bites

Today’s post is a special one, as it’s a collaboration with an amazing family owned, local company that makes clean, Whole30, Paleo and vegan approved sauces called Saucy Lips Foods. They make amazingly delicious sauces that you can use to cook with, as a dressing on salads, marinade for meat, and of course a dip or splash of flavor to everything you eat. Today I will show you another way to use their amazing sauces in baking, and give you a delicious savory treat – Zesty Cilantro Bites.

As many of you know, I am known for switching up recipes to be clean and healthy, while still delicious. This is not to brag or boast, it’s actually because it is so hard to find prepared food that is clean and healthy without preservatives and junk in it. Since changing my life to a healthier one back in 2015, I have relied on recreating all my my favorite foods, sauces and condiments until I found Saucy lips foods. They have a variety of sauces, some spicy and some not. Most using some kind of vegetable or fruit and only healthy fats. No sugars or preservatives and not fillers. A great way to save time and add flavor to everything you make.

Savory Cookies

As the holiday season approaches, everyone is baking and making indulgent and delicious treats. Of course we usually think of cookies and sweet treats, but sometimes we need a break from all the sweet. How about something savory and delicious? Well these Zesty Cilantro bites are it! They are soft and flaky, with a slight crunch. The flavors are bold and delicious because of the amazing zesty cilantro sauce, it’s a winning combination for a delicious healthy snack.

The recipe is so simple and easy to make with only 5 ingredients, and grain free. What’s even better is you can make the dough, and keep it in the freezer ready to bake when ever you’re in the mood for a great snack.

Notes and Tips

Although this recipe is dead simple, I have a few tips that will help you out. Firstly you can switch the Ghee for grass fed butter if you prefer. However either should be cold so you get a crumbly firm dough. This will also help later in baking to get a flaky mouthwatering texture.

When dough has formed, roll it in a log about 1 1/2″ in diameter and wrap in plastic wrap. This will then go in freezer to harden up.

Once roll is in freezer you can leave it there until you want to bake and eat. Just like Chocolate chip cookie dough you buy.

When you want to bake these beauties, simply pull out the roll and slice as many cookies as you want. I like them a bit thicker so they are soft and crunchy at the same time. I suggest to slice them about 1/4″ in thickness and place on the baking sheet. Don’t worry about spacing them out too much as they don’t spread. If you make your roll round and smooth, you will get perfectly round cookies. Don’t worry about it too much as they even out when baking.

If you prefer perfectly shaped cookies, you can roll out dough and cut cookies with a cookie cutter. You can make them festive with your favorite cookie cutters. However this an extra step and more work. Be sure to roll out dough between 2 pieces of parchment paper and work quickly to keep dough cold.

If you must make these cookies now, and do not have access to the Zesty Cilantro sauce you can substitute the sauce with fresh or dry herbs like rosemary, thyme and oregano. They come out good with the herbs but much better with the Zesty cilantro sauce.

Next step, is to brush them with more of that amazing zesty cilantro sauce. This will give them colour and more flavor.

Now it’s time to bake! Pop them in the oven and wait 12-15 mon and you are all set. Although this year’s holiday season may be different. Maybe not be hosting many guests, you can still indulge and enjoy these Zesty Cilantro bites. They are simple to make, only 5-ingredients and make a great healthy snack, or side dish. Happy Cooking!

Zesty Cilantro Bites

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients

  • 1 1/4 cup almond flour
  • 1/2 cup tapioca flour
  • 1 cup aged Parmesan cheese
  • 3 tbsp + more for brushing of Zesty Cilantro Sauce from Saucy Lips Foods
  • 1 tsp of salt
  • 1/2 tsp black pepper
  • 1/2 cup ghee

Instructions

    1. Place all ingredients into a bowl and mix with hands until it coupes together into a dough.
    2. Roll into a log about 1 1/2” in diameter and wrap with plastic wrap.
    3. Place in freezer for 15-20 min to harden up.
    4. Preheat oven to 350 F and line 2 baking sheets with parchment paper. 
    5. Remove log from from oven and slice rounds about a 1/4” thick.  Place on baking sheet.
    6. Pour some zesty cilantro sauce in a small bowl and brush each round with sauce.
    7. Place in oven and bake for 13-15 min until golden and you see golden color spots throughout cookie, this is the Parmesan cheese.
    8. Remove from oven and allow to cool for 10 min before moving as they will harden up as they cool.  

Notes

If you are only using 1 baking sheet and doing it in batches remember to place remaining dough back in freezer while first batch bakes so dough does not soften up.

If you cannot find Saucy Lips Zesty Cilantro Sauce, you can substitute it for 1 Tbsp of dried rosemary and 1 Tbsp of dried thyme.
