I know it’s valentine’s day weekend and probably you are searching for a chocolatey sweet treats. Maybe in the the shape of a heart, or some kind of strawberry covered in chocolate. Well for me my indulging favorite food is Pizza, so valentines day food is all about the Pizza! I promise this Grain Free Pizza won’t disappoint, give it a try and you will see. Can’t live without it!

Going grain free/ Paleo was an adjustment for me. I can now say that after doing it for 4 years, the first few weeks are the hardest. Then it gets easy. There are tons of recipes, and products out there to help you along the way. You will get so used to it that you won’t miss gluten or grains at all. It’s all about mind set, and finding replacements of your favorite foods. However there is always one thing that is hardest to give up. Everyone has their little evil indulgent food that they can’t live without, making any diet harder. I’m not saying its impossible, but definitely your weak link is what can cause you to fall off the band wagon and fail.

For me switching over to a Paleo lifestyle was a choice. I feel the benefits of how I feel inside and out, outweigh what I had to give up, even though my weak link was and still is Pizza. This is what I craved and what caused me to cheat every few weeks. It’s like that little devil in your head telling you “just eat it” or “don’t worry it doesn’t count”. Its like in the cartoons when you have the little devil and angel voice in your head telling you what to do. My little devil comes out when it comes to pizza, until I found developed this Grain Free Pizza that won’t disappoint.

Origins of Pizza

Before I get into the details of this great grain free pizza, that won’t disappoint, let’s talk about Pizza. Pizza has actually been around for thousands of years. The idea of flatbread with toppings dates back to the ancient Egyptians, Greeks and Romans. They mainly ate what we would call focaccia bread, using the same pizza dough baked with olive oil and herbs. From that, the modern pizza emerged in Naples, Italy around the 1700’s. It was known as the poor man’s food. Since Naples was mainly a working town where people needed something quick, cheap, and easy to eat Pizza was the best solution.

Several years later as Italian immigrants came to New York to work, they brought with them the Pizza. They would make pizza to remind themselves of the flavors of home. Also because they needed something quick, easy and cheap to eat. Slowly, people became intrigued by this delicious and simple food and it became adapted into the American cuisine. Today Pizza is still super popular, and has become one of the top American foods both in fast food and gourmet styles.

Grain Free Pizza

I am sure many just hear the words grain free before Pizza and you’re done. It does not sound appealing or possible. Almost like a mind game or a trick, however I promise this grain free Pizza won’t disappoint. Grain Free pizza can be very tricky as there is no gluten to give the dough elasticity. With grain free dough it’s about the combination of flours. Each alternative flour has it’s own properties, and by combining them together you get as close to wheat flour as possible. Its about the ratio between the different flours and the combinations.

The Secret

So what is the secret to this grain free pizza, that won’t disappoint? Its the grain free yeast to give it the smell of real pizza dough. It’s the combination of almond, tapioca and arrowroot flour for the texture. Then the magic happens with the toppings! All the delicious flavors combines make this the best grain free pizza that won’t disappoint!

My other secret to making this the best grain free pizza that won’t disappoint is the pesto sauce I use on the base of the dough on the first bake. Check out my best pesto in town recipe. I always have some made in the fridge to use for this pizza and other things too. After first bake I add tomato sauce and toppings and re-bake to get the dough extra crisp. Using this pan helps a lot. The holes at the bottom help dough cook and not get soggy. Defiantly worth the $12.00 for the best pizza in town.

Alternatives

I prefer making this pizza dough egg free, making it great for people with sensitivities to eggs and for vegans. I like to you the egg replacer mix from Bob’s red mills, however you can use 1 egg if you don’t have the egg replacer.

Also with flours, you can interchange the arrowroot with Cassava flour. If you like a chewier dough then cassava would be better. However if you like a thin crisp dough like me stick to the arrowroot flour.

I also use a touch of xanthan gum in the recipe. It is not a must however it does help a lot with the texture of the dough. I have tried wit with and without and the dough is much easier to work with and tastes better with it. This is an ingredient I rarely use as it can be an irritant to some, however in this dough I think it works better.

Thin, crisp, grain free pizza that won't disappoint! The best vegan, grain free pizza dough you'll ever try that is quick and easy to make.

Ingredients

  • 1 cup blanched almond flour
  • 1 1/2 cups tapioca flour plus more for dusting
  • 3/4 cup arrowroot flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon sea salt
  • 1 egg or 1 Tbsp. egg replacer
  • 1 Tablespoon olive oil
  • 3/4 cup warm waters
  • 1 Tablespoon honey/maple syrup
  • 1 Tablespoon active dry yeast gluten free
  • 3 Tbsp. Best pesto in town
  • Grated raw goat mozzarella or vegan mozzarella
  • Toppings: mushrooms, onions, grilled veggies, pepperoni, olives, etc.

Instructions

  1. Preheat oven to 375 F and be sure to have some Best Pesto in town ready to use. If not make it now by clicking on link, it only takes 2 minutes.
  2. Place 3/4 of a cup warm water with yeast and honey to bloom. Allow to sit on counter while you mix up the flours. Yeast will start to grow and bubble.
  3. While yeast is blooming, in a large bowl add flours, xanthan gum, salt and mix well.
  4. Add olive oil and yeast, mix well into a dough. It should be firm and easy to handle. If too sticky, add a little bit of tapioca flour. If too dry, add a tiny bit of water. Be sure to mix with hands as it may look very dry but when you touch it and mix by hand it is moist. If dough is too wet it will be too sticky to handle.
  5. Place half the dough in between two pieces of parchment paper and roll out to the size of your pan. I prefer thin crust, so I stretch it out as thin as possible.
  6. Place dough on perforated pan and cut around edges if there is any extra dough to make it a nice round circle. I usually use the bits I cut off to make a thicker crust around the edges.
  7. Gently spread some Best pesto in town all over dough and bake for 12 min. This will help the dough crisp up and not get soggy after adding toppings. The pesto not only adds flavor but also keeps dough from drying up.
  8. Remove half baked dough from oven and add tomato/pizza sauce, cheese and toppings of your choice. I like to use goat mozzarella as it is easy to digest. You can use vegan cheese or no cheese.
  9. Bake for an addition 10 minutes. Remove from oven, slice and enjoy.

Notes

Dough can be made in advance and stored in fridge for up to 1 week.

You can prebake dough (step 6) and then freeze to have pizza ready when ever you want to eat. Just add sauce and toppings and bake. No need to defrost.

Pizza is great with no cheese for strict Paleo, just add lots of great toppings and meats.

You can shape dough in any shape or form and make individual size pizzas as well.
