This week’s post, while still all sweets as promised is dedicated to Healthy Hanukkah Treats, since it is Hanukkah for those who celebrate. Hanukkah is an 8 day celebration of everything fried and indulgent. So what better way to celebrate this fun holiday with delicious, healthy treats.

What to Eat?

The most popular Hanukkah treats are potato pancakes known as “latkes”, and doughnuts. The potato pancakes are made with potato onions and eggs and fried, served with applesauce. I know it sounds weird but people like it! Check out my Air Fryer Latkes recipes below. The traditional doughnuts for Hanukkah are called “sufganiyot” and are jelly filled. However today you can find all kinds of creative fillings that are super delicious and indulgent.

Aside from those two foods, there are lots of other yummy treats. Basically anything fried and delicious goes. Some people make cookies, fudge, rugelach (pastry cookie filled with chocolate or jam), blintzes (crepe like pancake filled savory or sweet), as well as other typical jewish foods. The idea is to gather with friends or family and light the Hanukkah candles. The celebration is a happy, one to remember the miracle that happened of oil lasting for eight days instead of one. Hence eating fried food, celebrating the oil!

This year of course is a bit different like with all our celebrations and life, however we can still celebrate with food. No matter what religion you are or if you celebrate, food is always a fun way to savour the flavors and traditions.

Air Fryer Latkes

Yield: 12
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Crispy and delicious air fryer potato latkes, perfect quick and easy healthy Hanukkah treat

Ingredients

  • 3-4 idaho potatoes, peeled and shredded
  • 1/2 and onion grated or finely chopped
  • 1/3 cup of arrowroot flour
  • 3 eggs
  • Avocado spray oil
  • salt and pepper to taste

Instructions

  1. Grate potatoes and place in a tea towel, squeeze a much water out as you can. they need to be as dry as possible.
  2. in a large bowl add all ingredients and mix well.
  3. let sit for 10 min in fridge so mixture comes together.
  4. Scoop out 1 tbsp of mixture and form into a round patty and place on air fryer tray.
  5. Repeat until tray is full. SPray with avocado oil and bake at 350 F for 15 min until golden brown. Be sure to flip over half way through to get boths sides crisp and golden
  6. If needed repeat steps 4 and 5 until all latkes are done.

Notes

If you do not have an air fryer you can use a convection oven at same temperature. You may need a little more time to cook.

If you do not have convection oven or air fryer then you can pan fry them with avocado oil.
