This week I have a special recipe sweet treat for all my readers and followers, its OMG Marzipan. Sweet almond paste that can be sculpted, and is ridiculously easy to make. This OMG marzipan is made with only 3 ingredients (and water), and is used in cakes, fillings, or sculpted figures like fruits or animals. Remember those in the fancy bakeries?

What is Marzipan?

Marzipan is a pliable paste made with almonds, sugar and egg whites. It originated in the Middle East, then later came to Europe. This delicious treat dates back to as early as the 15th century, when it was used to sculpt elaborate figures that were presented at Medieval feasts.

Marzipan gained its popularity in Europe, and became a special treat eaten on holidays and other special occasions. Depending on which country you were in, the shapes and methods varied. For instance when in Italy you can find more fruit shapes, alternatively in Spain it’s more common to find animal figures.

Over the years marzipan has become increasingly popular and is no longer an expensive delicacy. Today you can easily find marzipan and use it for pastries, chocolates, or just on its own.

3 Ingredients!

Traditionally marzipan is made with sugar, almonds and egg whites. It involves a lot of time and manual labor to get it smooth and pliable. This OMG marzipan recipe is quick, easy, and healthy. Its made with almond flour, monk fruit powdered sugar, a drop of almond extract and water. That it, that’s all. Just a few simple ingredients mixed in a bowl and it’s ready to eat.

What’s great about this OMG Marzipan is it’s grain free, sugar free dairy free, and egg free. This means it’s vegan, paleo, and keto. There is no refined sugar here, only a powdered sugar is from monk fruit which is a natural sweetener.

In fact, I stumbled upon this creation totally by accident, when switching up an old family favorite dessert (coming soon) and needed marzipan. Since ready-made marzipans are made with refined sugar and natural flavors (pure chemicals) I needed a cleaner option. After a little bit of experimenting and research on marzipan, the OMG marzipan was born.

Yield: 1 cup
Prep Time: 4 minutes
Total Time: 4 minutes

Ingredients

  • 2 cups almond flour
  • 1 cup powdered monk fruit
  • 1/4 cup water
  • 1 tsp pure almond extract
  • Dark chocolate for dipping

Instructions

    1. In a mixing bowl add all ingredients.
    2. Using your hands mix together to form a dough.
    3. Kneed for a few minutes and roll into a log. 
    4. Place in an air tight container and refrigerate until ready to use.
    5. Chocolate marzipan melts (optional)- melt 1/2 cup of dark chocolate gems in microwave. Start with 20 seconds at a time, total 45-60 seconds, and keep mixing and checking it until it’s completely melted.
    6. Remove marzipan from fridge and slice into thin rounds.
    7. Carefully dip each round in chocolate and let dry on parchment paper



Notes

You can shape marzipan in any shape you desire and use it in baking or as a filling.

You can use maple powdered sugar as an alternative. Just place maple sugar in high speed blender until it powders.
