Seedy Crackers & Green Goodness

Over the past few weeks I discovered a new love, which I just can’t stop eating all day and night 0 Seedy Crackers & Green Goodness. I developed this recipe by taking an old recipe I had for crackers, and switched up a few ingredients to get these crisp, delicious, flavorful bites. They are irresistible! Aside from the fact that these Seedy crackers are scrumptious on their own, they are even better with my super versatile Green Goodness dip. It’s my take on the “green goddess” salad dressing mixed with a spiked guacamole. I promise you won’t be disappointed with my new favorite healthy snack.

The Crackers

Let’s start with the Seedy crackers. Believe it or not, this recipe is grain-free, dairy-free and vegetarian. Yes, grain-free crackers that are crunchy, healthy and taste good. Some of the amazing ingredients they include are fennel seeds; great for aiding in digestion. Sesame seeds, olive oil and almond flour providing healthy fats, and coconut flour for extra fiber. More importantly, these crackers are quick and easy to make, which is what really matters. This recipe calls for only a handful of ingredients, and makes 2 big trays, giving you plenty of crackers to munch on for a few days.

The Dip

My green goodness dip is exactly what the name says; packed with greens, bursting with flavors and goes with everything. I paired these two recipes together as I think the flavors are out of this world. To me it’s like a boosted up guacamole on a crunchy tortilla alternative. Did I mention how versatile this dip can be? Aside from it making a great dip, this sauce can be used as a salad dressing, a marinade, or as a booster for flavor in any dish. It’s super easy to make, and the best part is you can prepare it in advance and keep in ready in the refrigerator to use for what every you decide.

Seedy Crackers:

INGREDIENTS

For dough:

1 1/2 cup almond flour

1/4 coconut flour

1/4 cup arrowroot flour

2 tsp. sesame seeds

2 tsp. fennel seeds

1/2 tsp. onion powder

2 tsp. poppy seeds

1/2 tsp.sea salt

1/4 tsp. pepper

2 egg whites

5 tbsp. olive oil

2 tbsp. water

For topping:

1 tsp. sesame seeds

1 tsp. poppy seeds

1/2 tsp. sea salt

1 tsp. fennel seeds

2 egg yolks

1 tsp. water

DIRECTIONS

  1. Preheat oven to 375 F, and prepare 2 sheets of parchment paper to fit a baking tray.
  2. In a medium bowl mix almond flour, arrowroot flour and coconut flour, and add in seeds and spices. Mx well.
  3. In a separate bowl lightly beat egg whites, oil and water.
  4. Then pour wet mixture into dry mixture, and mix well until a dough forms.
  5. Split dough into two equal parts.
  6. Take 1 half of dough place in between two pieces of parchment paper.  Roll the dough out in to a thin, even flat piece, approximately 1/8” thick.
  7. For topping: beat egg yolks and water in a small bowl and set aside. 
  8. Mix the rest of spices in a small bowl (remember this will be used for both pieces of dough)
  9. Brush dough with egg wash and sprinkle seeds on top.  Be sure to only use 1/2 the seeds as you will need the rest for the other piece of dough.
  10. Next, place tray in oven for 14-16 minutes, until it is golden brown.
  11. While the first batch is baking, you can start working on the next piece of dough. Roll it out, brush with egg wash, and sprinkle with rest of seeds.
  12. Once the first batch is done, then remove crackers from oven. Let them cool for 10 minutes and then you can break into pieces. Crackers should be crispy and dry.
  13. Repeat baking for second pieces.
This is the approximate size and thickness dough should be after being rolled out and prepared to go in oven.
When crackers are taken out of oven, they should be left to cool before breaking into pieces. They will harder up!
Green Goodness Dip:

INGREDIENTS

1 avocado

1 jalapeño pepper without seeds

1/2 cup cilantro

1/2 cup parsley

Juice of 2 limes

2 garlic cloves

1/2 cup olive oil

1/2 cup water

1 tsp. Salt

1/2 pistachios

DIRECTIONS

  1. Place all ingredients except pistachios into food processor and pulse.   Don’t over mix as you want it to look chopped verses a smooth creaky mixture.
  2. Add pistachios and pulse a few more times. 
  3. Serve and enjoy
This bright green dip is packed with flavor and nutrients.
