Today’s weekend inspiration is one of the most popular recipes from my cookbook Switch It up ! It’s my Cheesy Cracker Crisps. Remember goldfish crackers or Cheez-it crackers, well very similar however much healthier.

This recipe is fast and easy to make, with only wholesome, real food to create a version of everybody’s favorite savory snack. What’s even nicer about these Cheesy Cracker Crisps, is that they only use 5 ingredients. You can shape them into anything you like i.e. goldfish, circles, squares, etc.

Cheesy Cracker Crisps is one of the the many favorites in my cookbook on healthy snacks called Switch It Up!. The cookbook has over 80 recipes that take your favorite snacks and switches them up to a healthier version. The idea behind it was to take the worst/unhealthiest kid favorites and make a delicious, tasty version so you don’t need to feel bad when you feed your kids their favorite snacks. The recipes are easy, quick and only need a few ingredients.

Let’s talk ingredients, as I mentioned this recipe only uses 5 ingredients and one is water. When was the last time you checked the ingredients of Goldfish crackers or Cheez-it crackers? I am sure there are a lot more than 5 ingredients. Although we may love them, there are a lot of things in them that we don’t need nor healthy for us. Take a look for yourself:

These Cheesy Cracker Crisps use almond flour as well as sharp cheddar cheese for some added protein. There are some spices for flavor, tapioca flour to get them extra crisp, and water, that’s it, that’s all. For anyone who prefers a nut free version you can substitute the almond flour with tapioca flour, whole wheat flour, or chickpea flour. Same goes for cheese, if you prefer a dairy free version try using a vegan cheese. I like this one from Violife.

Easy Cheesy Cracker Crisps

Yield: 75-80 crackers
Prep Time: 10 minutes
Cook Time: 20 minutes 15 seconds
Additional Time: 5 minutes
Total Time: 35 minutes 15 seconds

Fun, easy, crispy, and delicious cheesy cracker crisps. Great for when your on the go and need a satisfying savory snack that is clean and real.

Ingredients

  • 1 cup organic sharp cheddar cheese
  • 1 cup almond flour
  • 1/2 cup tapioca flour
  • 1/2 tsp paprika
  • 4 Tbsp ice water
  • Salt to taste (approx 1.2 tsp)

Instructions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper.
  2. Add all ingredients in a food processor and mix. After a few minutes, ingredients will start to stick together and a small ball of dough will form.
  3. Take ball out and place between 2 pieces of parchment paper.
  4. Using a rolling pin, roll dough out to 1/2" thick.
  5. With a pizza cutter or sharp knife, mark a grid on dough to form 1" squares.
  6. Poke 1-2 holes in each cracker with a form or toothpick.
  7. Bake in oven for 15-20 minutes.
  8. Allow to cool as they will get crisper, and break into crackers.

Notes

  • For a nut-free version, substitute almond flour with 1 1/2 cups whole grain flour.
  • Crackers can be stored in an airtight container for up to 1 month.
  • These can be cut into fish shapes (gold fish crackers) as well with correct cutters.
