Morning Toast Tostones (update)

If you have been following my posts you know I am on the WHOLE30 Challenge this month. So far it’s been almost 4 weeks and I feel amazing. So much energy, so much mind clarity, not tired when I wake up (even wake up before my alarm), digestion is great and no cravings. I would not believe that it would make a difference as I eat pretty healthy and similar already, but yet I feel changes for the better. Today I will Share my Morning Toast Tostones which have helped me survive the Whole30 and are delicious too.

One of the challenges for me was not having a toast in the morning. Since I normally follow a paleo diet I don’t eat bread, however I have found alternatives. In the Whole30 there are none like that so I had to get even more creative and came up with my Morning Toast Tostones made in the airfryer!

What are tostones?

So for anyone who is not familiar tostones are twice-fried plantain slices that are commonly eaten in central and south america. They use the plantain when it’s green and fry it, mash it and re=fry it to get extra crispy. Usually they are served as a side dish and and deep fried.

Traditional Vs. Airfryer way?

Of course just reading the recipe and knowing they are double-fried, in who knows what kind of oil (not healthy oils I’m sure), I needed to find a way to Switch them up and make them healthier. I think these morning toast tostones are a good alternative without sacrificing the taste, and putting them to good use as my morning toast.

Instead of double frying them I chose to use my airfryer. I am obsessed with this airfryer and put everything in it to see how it comes out, so far no regrets. This way I got a super crisp tostone with much less oil and I used avocado oil. they were delicious, crisp and quick to make. Check out the recipe below and try it out. Happy Cooking!

Ingredients

2 green plantains

1-2 tbsp avocado oil

salt and pepper to taste

topping of your choice -avocado, egg, cream cheese, vegan cheese, etc.

Directions

Cut plantains into 2″ pieces, then score through peel and pull off without damaging the plantain.

Place peeled plantain pieces on air fryer pan, spay with a little avocado oil and air fry for about 5 min. You will have to watch them and see when they turn golden yellow.

Once golden, remove from air fryer, now it’s time to mash them into tostones. I find the best way to do this is to use the bottom of a cup or glass. You simply stand each piece up vertically and squish it down with glass bottom to form a circle. Alternatively you can use a rolling pin, potato masher or tortilla press, however a cup or glass is easiest.

Once tostones are formed, place back on air fryer pan and spray with avocado oil again. Sprinkle with salt and air fry at 400 F for about 10-12 min depending on airfryer (I use this one). Keep an eye on them to make sure they don’t burn. You can flip them half way through to get crisp on both sides. You will know they are ready when they are bright yellow and crisp. They should lift off airfryer tray easily.

Crispy and delicious substitute for bread when you crave a sandwich! Morning Toast Tostones are a great treat with any topping.

Ingredients

These taste best when eaten right away

If you do not have an airfryer you can bake them in a regular oven at 450 F and increase time by 5 to 10 min.

Top these with everything! My favorite is avocado but eggs, turkey breast or vegan cream cheese and also great.
